"I used about 1 lb. of pollack, cut into small pieces. You can also use tilapia or any other kind of white fish. The marinade consists of: 2 tbsp distilled white vinegar, 2 tbsp fresh lime juice, 2 tsp lime zest, 1 1/2 tsp honey, 2 cloves minced garlic, 1/2 tsp cumin, 1/2 tsp chili powder, 1 tsp Old Bay seafood seasoning, 1/2 tsp ground black pepper, and 1 tsp hot pepper sauce. Then whisk in 1/4 cup extra virgin olive oil. Mix well and pour the entire mixture on top of the fish and let this marinate in the fridge for a few hours."
